About Variegata

Variegata is an ornamental and edible horseradish (Armoracia rusticana) cultivar with large green leaves irregularly splashed with pale cream. The Royal Horticultural Society describes it as slightly less vigorous than the unvariegated species. Utah State University Extension notes tolerance of partial shade. Nebraska Extension cautions that its lower vigor can mean two to three years to establish a substantial stand; that is an establishment period, not a fixed root-harvest maturity.
