Conservera is the Mexican plum clone selected specifically for preserving — the name means, literally, "the canning one." It appears both in the ethnobotanical inventory of ciruela mexicana morphotypes from central Guerrero, where growers keep it expressly for making conserves, and in a phenotypic and chemical characterisation of 86 accessions from Guerrero and Morelos, where the Conservera accession recorded 17 degrees Brix, the highest total soluble solids in the entire sample set (the range across all accessions ran from 6 to 17 Brix). That combination of very high sugar with a tart edge is exactly what a preserving fruit wants, since it holds flavour through cooking and sugar concentration. It is a good example of a jocote clone selected for a processing job rather than for eating out of hand, which is unusual in a species mostly chosen on fresh-fruit sweetness.Read more
