Coffeecake (also sold as Nishimura Wase) is a pollination-variant non-astringent (PVNA) persimmon that develops its best flavor when pollinated and seeded, shedding astringency while the fruit is still firm. The large, roundish fruit has rich, spicy-sweet flesh that turns brown when ripe, evoking cinnamon coffee cake, and it ripens about three weeks to a month earlier than Fuyu.
