Bramley, or Bramley's Seedling, is the classic English cooking apple, dating to the early 1800s. The large, green fruit is intensely sharp and acidic, cooking down to a light, fluffy puree that is prized for pies, crumbles, and sauce. Too tart for most fresh eating, it is the benchmark culinary apple in Britain.
