Barón Rojo
Barón Rojo, usually sold simply as jocote ácido or "sour jocote," is the workhorse dry-season clone of lowland El Salvador and one of only three jocote cultivars that CENTA's national technical guide identifies as commercially important (alongside Corona and Azucarón). It is concentrated in the hot west of the country, where the municipalities of Ahuachapán and San Lorenzo alone carry roughly 420 hectares of acid jocote in the hands of about 850 smallholders, out of an estimated 700 to 800 hectares nationwide. Like every jocote cultivar it is a clone maintained entirely by large stem cuttings rather than seed, so all Barón Rojo trees are genetically the same selection. Most of the crop is picked green and eaten fresh with salt, lime and alguashte, while surplus fruit is the main raw material for jocote pulp, jam, syrup and bottled drinks, since CENTA treats the acid types as the ones best suited to industrial processing.Read more
